We opened the 7th Street Cafe in July 1992 at 832 S. 7th Street, enjoying our “south of the tracks” industrial park location. A 40-seat warehouse evolved into a diner, and we struggled to attract customers who could navigate the local road construction. In spite of the coal trains that blocked the street for 30-45 minutes a day, word got around that we were serving good food at a fair price, and our business slowly grew beyond the 40 seats. More
